Parsley is one of the most widely used culinary herbs in the world, although the herb is also classified as a vegetable and spice. Like many of its cousins in the carrot family of plants, parsley is an excellent source of vitamins and minerals. The fresh taste of the leaf lends versatility.     Although parsley is a plant largely grown for its foliage, the root of the herb is also edible. Parsley root powder is the dried and ground root of the plant and has all of the characteristics of the fresh vegetable.

    Add the powder to foods and beverages for a mild, celery flavor. The powder may also be encapsulated.
